Chef’s Summer Salad Recipe

If you have stopped by recently then you may have noticed that there have been some changes at our pub in Wiltshire – all of them exciting! We caught up with our new Head Chef Joe to see what dishes he had in mind for our upcoming menus. He was very keen for us to share his peach, walnut, feta and chilli summer salad. We think it is delicious, and if we get more summery weather it would make the perfect addition to any bbq!

The quantities below will serve four – you just need to half the amounts to make it for two people.

You will need:

Mixed leaf salad, either 2 bags from the supermarket or picked from your own garden or allotment

300g of walnut halves

2 chillies 

400g feta

6 peaches

100ml Sherry vinegar

60ml honey 

50ml olive oil 

Whole nuts (to taste)

Pea shoots (to taste)


To start, wash the mixed leaf salad and spin the excess water out – you want to make sure it isn’t too wet.

On a tray toast the walnuts in the oven until crisp and crunchy – this usually takes around 8 minutes. Don’t forget to leave them to cool. 

Deseed the chillies and slice very finely. Put to one side in a bowl. 

Slice the peaches into segments (about 8 per peach) and set aside.

In a pan, add a little olive oil and caramelise the peaches until golden.

To the peaches, add half the chillies and deglaze the pan with the vinegar. Add the honey.

Remove the peaches – what is left is now your dressing.

In a large bowl add the mixed leaf salad, walnuts and remaining chillies. Crumble in the feta.

Add the dressing from the pan and mix well.

On a plate scatter the peaches around and add a few handfuls of the salad. If you want, you can add some extra garnish with whole nuts and pea shoots to excite your guests and to vary the textures of the dish.
